What’s For Dinner Quickie BBQ Chicken Part 1

OK! Tonight we are having a quick BBQ Chicken and Oven Fries along with some store bought cole slaw. YUM! This one is especially good for those hectic nights when you come home from going in six different directions! This is quick and delicious! The ingredients are probably some you already have on hand. This is what you will need: 4 Chicken breasts, boneless and skinless (mine are organic) 1 cup of your favorite BBQ Sauce (mine is Sweet Baby Ray’s) Oil for pan In a bowl or large measuring cup place the chicken and the BBQ sauce and mix to coat. Cover loosely and set aside while you prepare the potatoes to go in the oven. Place about 1 Tbsp of oil in a skillet over medium low heat. 4-6 potatoes (I used russets) Olive Oil Seasoned Salt Black Pepper Lemon Pepper Garlic Powder 1 gallon zipper seal bag Preheat oven to 450 degrees. Wash potatoes and cut into wedges. In a 1 gallon zipper seal bag, place 2-3 Tbsp olive oil and spices to taste, mush around in bottom of bag just to incorporate, place potatoes in bag and seal. Massage the oil and spice mixture onto the potatoes until they are all well coated. Dump potatoes on to a baking sheet covered in aluminum foil (I used non stick foil, my new favorite friend in the kitchen) and place in oven for about 25 to 30 minutes. Place chicken Breasts in hot skillet. Cover and cook for about 5 to 7 minutes, remove lid and turn chicken, turn down heat if needed replace lid and cook for another 10 to 15 minutes until chicken is completely

    Thanks Sarah! I use those silly bags for EVERYTHING! If it weren’t for them and foil and parchment, I would be doing a lot of unnecessary clean up. Glad you enjoyed this!

    I like how you made your potatoes, that’s really a neat idea to put the olive oil inside to coat the potatoes. I never knew how to do that. Learn something new everyday. Now I’m hungry. You’re right it does look really good.

    Hey Me2, I would bake these in a baking dish with some foil on them for the first 20 minutes of cooking and then remove the foil, for 10 more minutes, or until the juices run clear, you may not end up with as saucy a dish, but it will be just as delicious. If you bake them in the oven, omit the olive oil and just use some cooking spray to coat the pan, that should be good, I used too much oil when I filmed this. You can always have more sauce on the side from the bottle. Enjoy! Noreen.

    Thanks! You are welcome at my home any old time! There is always plenty. I love my pans, this set is called command performance and I got it from HSN. I have had these pans almost 3 years, they look brand new, they wear very well. I wanted pans that did not have non stick surface. I hate it when they peel! I do have egg pans that are non stick and I also love my cast iron, I have lots of kitchen tools. And yes, those potatoes are awesome, my family loves them. Take Care, Noreen

    You said the chicken could be baked while the potatoes are cooking. Do you need to do anything different to the chicken when baking rather than frying?
