I want to stay surprised, but I really like one baby girl bedding set. Is it ok to register for one girl set and one boy set and then return (or keep) the one I don’t end up using?

No, I think that’s tacky personally. You should probably either purchase it yourself after the baby is born or register for something gender neutral. There are plenty of items you can register for that are gender neutral and save things like that for later – good luck!
I would suggest that you either register for gender neutral bedding or just go out and buy what you want after you have your baby. I think it’s kind of stupid to register for boy and girl items just because you don’t want to find out your baby’s gender.
